Bircher Muesli

It’s tough out here being a vegan during breakfast time. You only realise how many animal products are in staple breakfasts once you can’t eat them anymore. It can kind of be disheartening because if you already thought breakfasts were limited imagine how limited they are without eggs or bacon or yogurt. It’s the streets out here.

But hey, it’s not all so bad. You can always make smoothies or even better, smoothie bowls or make oatmeal or porridge or plain old cereal with dairy free milk.That’s cool. But you can’t be making smoothies every single day, all the time. You’ll get bored! Plus smoothie ingredients aren’t cheap. Making oats in the morning is so time consuming and troublesome and let’s be honest here folks, most of us don’t have adequate time management in the morning to make oats and not be late for work or school. And because school is weird and the education system is questionable, we have to wake up so painfully early that most of us are still half asleep by the time we have to make breakfast. As for cereal…Well… Cereal is just plain boring.

So what are you gonna do? You can’t skip breakfast and just drink a cup of coffee. (Although so many of us are guilty of doing that). Is breakfast not the most important meal of the day? You can’t go ahead and skip such important things in life. That’s like skipping your own wedding. Or skipping the birth of your child. Or skipping showering three days in a row. I don’t know about you but that’s just not right.

So then what are you gonna eat?

Bircher Muesli.

The answer to all your breakfast related prayers. Easy. Delicious. Nutritious. Customizable. Quick to make. It’s basically the holy grail of easy nutritious breakfasts. And, *whispers* you can make it the night before, store it in a cute jar and eat it on your way to work or even better sneakily in class. It’s fabulous.

Bircher Muesli was created by this Swiss doctor a long long time ago who used to feed it to his patients and it gave them energy and basically completely healed them from all ailments and injuries. Since it was created by a doctor it’s safe to say that this is the healthiest meal you could eat for breakfast. Bircher Muesli isn’t like the ordinary muesli you’re used to with plain milk and fruit. It’s next level sh*t. It’s oats soaked in a mixture of milk and fruit juice with a whole grated apple, some dried fruit and a mixture of nuts and seeds and served with fresh fruit. In just one meal you have 2-3 of your 5 fruit a day plus energy and protein to fuel your body. How fabulous is that?

I’m telling you, this is a weekday breakfast game changer. Make everything the night before and the next morning add fresh fruit and you’re good to go. You don’t even need to add more fresh fruit if you don’t want to which makes it even easier. You can do and add whatever you feel like. Everything is up to you: what type of oats to use, what type of milk to use, whether you even want milk, what type of juice you want, an apple or a pear, maybe even a bit of a banana too (I like to add a mashed banana for extra sweetness when there’s no fruit juice), what kind of nuts and seeds, what extra fresh fruit you want. Literally every single component of this meal is customizable to fit your needs and wants. This is the amazing power of the muesli, ladies and gents.

Bircher Muesli

ingredients
  • a handful of rolled oats (gluten free if needed)
  • almond milk
  • fruit juice
  • 1 tbsp chia seeds
  • 1 tbsp linseeds (flax seed)
  • small handful walnuts and almonds
  • small handful dried fruit (cranberries and chopped apricots are great)
  • 1 apple (grated with the rough side of the grater)
  • squeeze of lemon juice
method

In a bowl, mix in all the ingredients. You will know that you’ve added enough liquid to the mixture when all the ingredients seem to be swimming in the liquid and you think you’ve added way too much. Cover the bowl and place it in the fridge to soak overnight or if you don’t have enough time soak for about 15-30 minutes. Once ready top with as many additional fresh fruit and nuts. Add sweetener of choice if you want but it’s really not needed.

Note: I haven’t put in exact measurements because it’s all up to how you want it and how much you want it. This recipe really works with measuring by eye in the same way you would make cereal. For ease. Because breakfast should be easy.
